Paleo Pancakes (submitted by Zhan) 1 egg 1 banana mashed 1.5 tablespoons ground flaxseed 2 tablespoons almond butter Mix well in a bowl, then pour the batter into a skillet with coconut oil (or olive oil) and cook about 1 minute on each side (may take a little longer depending on how big they are) if desired add in a tablespoon of cinnamon. Turkey Burgers and Brussel Sprouts (submitted by Lisa) Combine 1 lb ground turkey (I like the 99% fat free) with 1 chopped small onion and 1/2 chopped red pepper (can add other peppers too), 1 tbsp Dijon mustard (optional) and 1 tsp steak seasoning (optional too)–these give it a little spice. Separate into patties and broil on low rack about 10-15 minutes turning midway. Brussel sprouts–wash and halve sprouts (I used about 1/2 pound) and add to boiling water for about 2 minutes till bright green–drain well and pat dry. In skillet lined with olive oil heat on medium hot then add 4-5 chopped garlic cloves and sprouts, let simmer 1 minutes then add 1 tsp crushed red pepper and continue heating while stirring about 3 min. Serve with slotted spoon to allow oil to drain out. ]]>
