Well…lets say it’s a surprise PROD Eggs -n- Bacon cup (submitted by Tori) The eggs in bacon cups are: -3 eggs -3 egg whites -chopped mushrooms -1 tomato -6 slices of bacon -spicy italian seasoning. Cook the bacon first. I used turkey bacon, and it has so little fat, it does not curl up. This is perfect for these cups. Slice a tomato. I put one slice in the bottom of each cupcake form (you could also use a ramekin). I would recommend using 2 slices or a thicker slice, because it cooks down a bit, and if you like tomatoes you are going to want to taste them! Then wrap your cooked bacon around the cup. Next put the sliced mushrooms (or whatever veggies you wish) in, and then pour the egg mixture and seasoning on top. Cook for 20 min on 375 ]]>
